USDA is your source for current research-based recommendations for most methods of home food preservation.

The National Center for Home Food Preservation was established with funding from the Cooperative State Research, Education and Extension Service, U.S. Department of Agriculture (CSREES-USDA) to address food safety concerns for those who practice and teach home food preservation and processing methods. Numerous CSU Extension publications on food preservation are available.

Master Food Safety Advisor Program

Colorado State University Extension (CSUE) is excited to offer the Master Food Safety Advisor (MFSA) program for people who have an interest in food safety and food science or love to preserve food.  CSUE is offering this regional training on food safety and prevention of foodborne illness, methods of canning, pickling, freezing and dehydrating.  Master Food Safety Advisors must apply for selection to be in the program, must attend all trainings, work cooperatively with other volunteers and give a minimum of 30 hours of service to the community by sharing their knowledge and teaching others.

We are offering the Master Food Safety Advisor program so that we can expand CSU Extension’s capacity to provide the public with research-based information from Colorado State University and USDA by trained volunteers.  Volunteers will share their knowledge by volunteering in the community by answering consumer phone calls, providing information at local Farmers Markets, county fairs, or supermarkets, conducting presentations and workshops for community groups and schools, preparing educational displays, and/or writing articles for newsletters and newspapers.

 Training will be conducted on Wednesday, February 8, 15, 22, and March 1, 8, 2017. The training is held at the Garfield County Extension Office, Event Hall, 1001 Railroad Avenue, Rifle, Colorado (at the Fairgrounds).  Openings in the Master Food Safety Advisor program are limited.  The cost of the training is $145.00 with a commitment of 30 hours of volunteer service.  Applications are due February 1, 2017.
